We are excited to have hudson ranch pork on our menu! Located just about 1 hour north east of us in Carneros, they are the premiere producer of heritage breed hogs in Northern California. Their pigs are kept on pasture and get to forage daily for roots, grubs and acorns.

We are thinking a nice classic italian scaloppine cut with piccata sauce and asparagus risotto.
